- Beet, baked and peeled (1/2)
- Eggs (2)
- Milk (1/4 cup) plus more if necessary
- Maple syrup (2 tbsp)
- Coconut flour (4 tbsp)
- Baking powder (1 tsp)
- In a blender, combine beet cut into pieces, eggs, milk, and maple syrup. Blend until smooth.
- In a large bowl, combine the beet mixture, coconut flour, and baking powder.
- Heat a skillet over medium-low heat and add a bit of avocado oil.
- Cook the pancakes for 2-3 minutes on each side.
- Serve with your favorite berries.
