Pink Beet Pancakes

Ingredients

  • Beet, baked and peeled (1/2)
  • Eggs (2)
  • Milk (1/4 cup) plus more if necessary
  • Maple syrup (2 tbsp)
  • Coconut flour (4 tbsp)
  • Baking powder (1 tsp)

Instructions

  1. In a blender, combine beet cut into pieces, eggs, milk, and maple syrup. Blend until smooth.
  2. In a large bowl, combine the beet mixture, coconut flour, and baking powder.
  3. Heat a skillet over medium-low heat and add a bit of avocado oil.
  4. Cook the pancakes for 2-3 minutes on each side.
  5. Serve with your favorite berries.
