Pink Beet Pancakes
Ingredients
Beet, baked and peeled (1/2)
Eggs (2)
Milk (1/4 cup) plus more if necessary
Maple syrup (2 tbsp)
Coconut flour (4 tbsp)
Baking powder (1 tsp)
Instructions
In a blender, combine beet cut into pieces, eggs, milk, and maple syrup. Blend until smooth.
In a large bowl, combine the beet mixture, coconut flour, and baking powder.
Heat a skillet over medium-low heat and add a bit of avocado oil.
Cook the pancakes for 2-3 minutes on each side.
Serve with your favorite berries.
