Oatmeal with Caramelized Apples

Ingredients

  • Steel cut oats (3/4 cup)
  • Almond milk (2 1/4 cups)
  • Cinnamon (1 tsp)
  • Nutmeg (1/2 tsp)
  • Salt (1/4 tsp)
  • Coconut oil (1 tbsp)
  • Apple, diced (1)
  • Pecans (1/4 cup)
  • Pumpkin seeds (optional)
  • Honey to taste

Instructions

  1. In a small saucepan, combine steel cut oats, almond milk, cinnamon, nutmeg, and salt. Simmer for 15 minutes, stirring frequently.
  2. Meanwhile, in a small skillet, melt the coconut oil over medium heat, add diced apple and pecans, and sauté for 5 minutes.
  3. Top the oatmeal with caramelized apples, pecans, pumpkin seeds, and honey.
