Oatmeal with Caramelized Apples
Ingredients
Steel cut oats (3/4 cup)
Almond milk (2 1/4 cups)
Cinnamon (1 tsp)
Nutmeg (1/2 tsp)
Salt (1/4 tsp)
Coconut oil (1 tbsp)
Apple, diced (1)
Pecans (1/4 cup)
Pumpkin seeds (optional)
Honey to taste
Instructions
In a small saucepan, combine steel cut oats, almond milk, cinnamon, nutmeg, and salt. Simmer for 15 minutes, stirring frequently.
Meanwhile, in a small skillet, melt the coconut oil over medium heat, add diced apple and pecans, and sauté for 5 minutes.
Top the oatmeal with caramelized apples, pecans, pumpkin seeds, and honey.
