Ingredients
- Lentil blend, uncooked (3/4 cup)
- Cherry tomatoes, halved (1 cup)
- Scallions, chopped (1 bunch)
- Parsley, chopped (1 bunch)
- Mint, chopped (1 bunch)
- Lemon, juiced (1/2)
- Olive oil (3 tbsp)
- Salt and pepper to taste
Instructions
- Cook the lentils following the package instructions. Set aside to cool.
- Mix lentils, tomatoes, scallions, parsley, and mint.
- Add lemon juice, olive oil, and season with salt and pepper.
