Lentil Tabbouleh
Ingredients
Lentil blend, uncooked (3/4 cup)
Cherry tomatoes, halved (1 cup)
Scallions, chopped (1 bunch)
Parsley, chopped (1 bunch)
Mint, chopped (1 bunch)
Lemon, juiced (1/2)
Olive oil (3 tbsp)
Salt and pepper to taste
Instructions
Cook the lentils following the package instructions. Set aside to cool.
Mix lentils, tomatoes, scallions, parsley, and mint.
Add lemon juice, olive oil, and season with salt and pepper.
