Salmon Patties

Ingredients

  • Salmon fillet (1 lb | 450 g)
  • Eggs (2)
  • Oat four (1/4 cup)
  • Almond flour (1/2 cup)
  • Lemon zest (1 tbsp)
  • Italian seasoning (1 1/2 tsp)
  • Paprika (1 tsp)
  • Dried cilantro (2 tsp)
  • Ginger powder (1 tsp)
  • Salt and pepper to taste

Instructions

  1. Bake salmon in a preheated oven 400°F (or 200°C) for 20 minutes. Remove skin, then flake salmon with a fork, and cool for 30 minutes.
  2. In a large mixing bowl, combine flaked salmon and the rest of the ingredients. Stir to combine.
  3. Form the patties and sauté them for 3-4 minutes on each side, until golden brown.
  4. Serve with tartar sauce or greek yogurt mixed with lime juice, salt, and pepper.
