Ingredients
- Red onion, cut into wedges (1/2)
- Carrots, cut into wedges (2)
- Broccoli heads, cut into florets (2)
- Red bell pepper, cut into wedges (1/2)
- Yellow bell pepper, cut into wedges (1/2)
- Chicken breast, or thighs, cut into bite-sized pieces (0.6 lb | 270 g)
Asian-style sauce
- Teriyaki sauce (2 tbsp)
- Soy sauce (1/2 cup)
- Paprika (2 tsp)
- Pepper (1 tsp)
- Ginger powder (1 tbsp)
- Garlic, minced (3 cloves)
Instructions
- In a large skillet, sauté onion for 5 minutes.
- Add carrots, broccoli, red and yellow bell peppers. Sauté for another 5 minutes.
- Remove vegetables from the skillet and set aside.
- In the same skillet, sauté chicken for 5-7 minutes, until lightly browned.
- Meanwhile, in a small bowl, whisk together the sauce ingredients.
- Add vegetables and sauce to the chicken and simmer few more minutes, stirring occasionally.
