Buckwheat with Mushrooms

Ingredients

  • Buckwheat (1 cup)
  • Water (1 1/2 cups)
  • Salt to taste
  • Onion (1/2)
  • Mushrooms (0.5 lb | 225 g)
  • Butter (1 tbsp) 

Instructions

1. To archive a crispy texture, rinse and drain the buckwheat, and then, in a large skillet, fry it (no oil is needed) for couple of minutes until completely dry.
2. In a medium sauce pan, bring water to boil, add buckwheat and salt and simmer for 12-15 minutes, stirring often.
3. Meanwhile, sauté chopped onion and sliced mushrooms. Then add buckwheat and sauté for few more minutes. Add butter if desired.
