Zucchini Brownies
Ingredients
Eggs (2)
Zucchini (2)
Avocado (1)
Honey (4 tbsp)
Almond flour (1/2 cup)
Coconut flour (1/2 cup)
Cocoa powder, unsweetened (4 tbsp)
Baking powder (1 tsp)
Salt (1/4 tsp)
Dark chocolate chips (1/2 cup)
Walnut pieces (1/2 cup)
Instructions
Preheat the oven to 350°F or 180°C.
In a blender, combine eggs, chopped zucchini, avocado, and honey and process until smooth.
In a large bowl, combine almond flour, coconut flour, cocoa powder, baking powder, and salt. Mix well.
Add the blended vegetable mixture. Stir to combine. Add chocolate chips and walnuts.
Transfer the batter to a square pan greased with coconut oil. Bake for 25-30 minutes.
Cool for at least 30 minutes, then cut into pieces. Garnish with pecans, walnuts, and melted dark chocolate.
