Ingredients
- Coconut oil, melted (4 tbsp)
- Sugar (1/3 cup), or stevia
- Lemon juice (1/2 tbsp)
- Zest from 1 lemon
- Egg (1)
- Almond flour (1 cup)
- Coconut flour (2 tbsp)
- Baking soda (1/4 tsp)
- Salt (1/4 tsp)
Instructions
- Preheat the oven to 350°F or 180°C.
- In a large mixing bowl, combine coconut oil, sugar (or stevia), lemon juice, lemon zest, and egg. Mix well.
- Add almond flour, coconut flour, baking soda, and salt. Stir to combine.
- Roll the dough into balls, flatten slightly with your hands and place them on a baking sheet.
- Bake for 10 minutes. Then cool for at least 30 minutes.
- Optional: make a glaze by combining together powdered sugar, lemon juice, and lemon zest.
