Lemon Cookies
Ingredients
Coconut oil, melted (4 tbsp)
Sugar (1/3 cup), or stevia
Lemon juice (1/2 tbsp)
Zest from 1 lemon
Egg (1)
Almond flour (1 cup)
Coconut flour (2 tbsp)
Baking soda (1/4 tsp)
Salt (1/4 tsp)
Instructions
Preheat the oven to 350°F or 180°C.
In a large mixing bowl, combine coconut oil, sugar (or stevia), lemon juice, lemon zest, and egg. Mix well.
Add almond flour, coconut flour, baking soda, and salt. Stir to combine.
Roll the dough into balls, flatten slightly with your hands and place them on a baking sheet.
Bake for 10 minutes. Then cool for at least 30 minutes.
Optional: make a glaze by combining together powdered sugar, lemon juice, and lemon zest.
