Chicken Fried Rice with Vegetables

Ingredients

  • Brown Basmati Rice (1 cup)
  • Chicken breast (1)
  • Leek (1)
  • Onion (1/2)
  • Carrot (1)
  • Red bell pepper (1/2)
  • Broccoli (1/2 cup)
  • Corn kernels (1/2 cup)
  • Garlic (3 cloves)
  • Eggs (3)
  • Soy sauce (4 tbsp)
  • Salt and pepper to taste

Instructions

  1. Cook the rice following the package instructions
  2. Meanwhile, heat a large skillet over medium heat. Add diced chicken and sauté it until cooked through. Set aside.
  3. In the same skillet, sauté thinly sliced leek and diced onion for 5 minutes.
  4. Add chopped carrot, red bell pepper, broccoli, corn, and minced garlic. Sauté for another 5 minutes.
  5. Move the vegetables to the perimeter of the pan. Add eggs to the middle of the pan, then quickly stir eggs to scramble, using a wooden spoon.
  6. Add cooked rice, chicken, soy sauce, salt, and pepper. Stir to combine and cook for another 5 minutes.
  7. Garnish with green onion and add more soy sauce if desired.
