Ingredients
- Brown Basmati Rice (1 cup)
- Chicken breast (1)
- Leek (1)
- Onion (1/2)
- Carrot (1)
- Red bell pepper (1/2)
- Broccoli (1/2 cup)
- Corn kernels (1/2 cup)
- Garlic (3 cloves)
- Eggs (3)
- Soy sauce (4 tbsp)
- Salt and pepper to taste
Instructions
- Cook the rice following the package instructions
- Meanwhile, heat a large skillet over medium heat. Add diced chicken and sauté it until cooked through. Set aside.
- In the same skillet, sauté thinly sliced leek and diced onion for 5 minutes.
- Add chopped carrot, red bell pepper, broccoli, corn, and minced garlic. Sauté for another 5 minutes.
- Move the vegetables to the perimeter of the pan. Add eggs to the middle of the pan, then quickly stir eggs to scramble, using a wooden spoon.
- Add cooked rice, chicken, soy sauce, salt, and pepper. Stir to combine and cook for another 5 minutes.
- Garnish with green onion and add more soy sauce if desired.
