Chicken Fried Rice with Vegetables
Ingredients
Brown Basmati Rice (1 cup)
Chicken breast (1)
Leek (1)
Onion (1/2)
Carrot (1)
Red bell pepper (1/2)
Broccoli (1/2 cup)
Corn kernels (1/2 cup)
Garlic (3 cloves)
Eggs (3)
Soy sauce (4 tbsp)
Salt and pepper to taste
Instructions
Cook the rice following the package instructions
Meanwhile, heat a large skillet over medium heat. Add diced chicken and sauté it until cooked through. Set aside.
In the same skillet, sauté thinly sliced leek and diced onion for 5 minutes.
Add chopped carrot, red bell pepper, broccoli, corn, and minced garlic. Sauté for another 5 minutes.
Move the vegetables to the perimeter of the pan. Add eggs to the middle of the pan, then quickly stir eggs to scramble, using a wooden spoon.
Add cooked rice, chicken, soy sauce, salt, and pepper. Stir to combine and cook for another 5 minutes.
Garnish with green onion and add more soy sauce if desired.
