Ingredients
- Onion (1)
- Leeks (2)
- Carrots (3)
- Celery stalks (4)
- Garlic (3 cloves)
- Red lentils (1 1/2 cup)
- Crushed tomatoes (2 cups)
- Parmesan, grated (1/2 cup)
- Chicken, or vegetable broth (7 cups)
- Bay leaves (2-3)
- Salt and pepper to taste
Instruction
- In a large saucepan, heat olive oil over medium heat. Add diced onion and leeks. Sauté for 5-7 minutes.
- Add in chopped carrots, celery, and minced garlic. Sauté for another 3-4 minutes.
- Add lentils, crushed tomatoes, parmesan, broth, and bay leaves. Season with salt and pepper. Bring to a boil, then reduce heat to low, and simmer for 30 minutes, stirring often.
- Garnish with parmesan.
