Red Lentil Soup

Ingredients

  • Onion (1)
  • Leeks (2)
  • Carrots (3)
  • Celery stalks (4)
  • Garlic (3 cloves)
  • Red lentils (1 1/2 cup)
  • Crushed tomatoes (2 cups)
  • Parmesan, grated (1/2 cup)
  • Chicken, or vegetable broth (7 cups)
  • Bay leaves (2-3)
  • Salt and pepper to taste

Instruction

  1. In a large saucepan, heat olive oil over medium heat. Add diced onion and leeks. Sauté for 5-7 minutes.
  2. Add in chopped carrots, celery, and minced garlic. Sauté for another 3-4 minutes.
  3. Add lentils, crushed tomatoes, parmesan, broth, and bay leaves. Season with salt and pepper. Bring to a boil, then reduce heat to low, and simmer for 30 minutes, stirring often.
  4. Garnish with parmesan.
