Red Lentil Soup
Ingredients
Onion (1)
Leeks (2)
Carrots (3)
Celery stalks (4)
Garlic (3 cloves)
Red lentils (1 1/2 cup)
Crushed tomatoes (2 cups)
Parmesan, grated (1/2 cup)
Chicken, or vegetable broth (7 cups)
Bay leaves (2-3)
Salt and pepper to taste
Instruction
In a large saucepan, heat olive oil over medium heat. Add diced onion and leeks. Sauté for 5-7 minutes.
Add in chopped carrots, celery, and minced garlic. Sauté for another 3-4 minutes.
Add lentils, crushed tomatoes, parmesan, broth, and bay leaves. Season with salt and pepper. Bring to a boil, then reduce heat to low, and simmer for 30 minutes, stirring often.
Garnish with parmesan.
