Baked Sweet Potato Fries

Ingredients

  • Sweet potato, large (1)
  • Avocado oil (2 tbsp)
  • Cornstarch (1 tbsp)
  • Paprika (1 tbsp)
  • Salt and pepper to taste

Instructions

  1. Peel and cut potatoes evenly.
  2. Soak cut potatoes in cold water for an hour. Then rinse, drain and pat dry.
  3. Toss potatoes with oil, cornstarch, paprika, and pepper (NO SALT at this time).
  4. Transfer potatoes to a baking sheet covered with parchment paper and space them evenly.
  5. Bake potatoes in a preheated oven (425°F or 220°C) for 30 minutes, flipping halfway through.
  6. Let cool for 3-5 minutes and sprinkle with salt.
  7. Serve with a sauce of your choice.
