Ingredients
- Sweet potato, large (1)
- Avocado oil (2 tbsp)
- Cornstarch (1 tbsp)
- Paprika (1 tbsp)
- Salt and pepper to taste
Instructions
- Peel and cut potatoes evenly.
- Soak cut potatoes in cold water for an hour. Then rinse, drain and pat dry.
- Toss potatoes with oil, cornstarch, paprika, and pepper (NO SALT at this time).
- Transfer potatoes to a baking sheet covered with parchment paper and space them evenly.
- Bake potatoes in a preheated oven (425°F or 220°C) for 30 minutes, flipping halfway through.
- Let cool for 3-5 minutes and sprinkle with salt.
- Serve with a sauce of your choice.
