Wild Rice Bowl with Roasted Vegetables

Ingredients

  • Sweet potato, cut into cubes (1)
  • Golden beets, cut into cubes (2-3)
  • Wild rice (1/2 cup)
  • Bowl base: kale, or any greens of your choice
  • Add-ins: goat cheese, pistachios
  • Salt and pepper to taste

Instructions

1. Preheat the oven to 425°F or 220°C.
2. Spread sweet potato and beets on a baking sheet, drizzle with avocado oil, season with salt and pepper, and bake for 25-30 minutes.
3. Meanwhile, cook the wild rice following the package instructions.
4. Combine your favorite greens, baked vegetables, and rice. Add crumbled goat cheese and pistachios.
5. For the dressing, combine olive oil, balsamic vinegar, Dijon mustard, salt, and pepper.
