Chicken Stir-fry with Asparagus and Mushrooms

Ingredients

  • Asparagus, cut into 2-inch | 5 cm pieces (1 bunch)
  • Mushrooms, cut into medium pieces (0.5 lb | 225 g)
  • Garlic, minced (2 cloves)
  • Chicken breast, cut into strips (1 lb | 450 g)
  • Salt and pepper to taste
  • Sesame oil (2 tbsp)
  • Soy sauce (2 tbsp)
  • Teriyaki sauce (1 tbsp)
  • Ground ginger (1 tbsp)

Instructions

  1. In a large skillet, sauté asparagus, mushrooms, and minced garlic 5 minutes, then set aside.
  2. In the same skillet, add chicken breasts. Season with salt and pepper and sauté for 5-7 minutes, until the chicken is cooked through.
  3. Add vegetables back to the skillet.
  4. Meanwhile, combine sesame oil, soy sauce, teriyaki sauce, and ground ginger. Add sauce to the skillet and sauté for few more minutes.
  5. Top with sesame seeds.
