Syrniki

Ingredients

- Farmer’s cheese (2 lbs | 1 kg)
- Eggs (2)
- Sugar (3 tbsp)
- Salt (1/2 tsp)
- All-purpose flour (1/2 cup)
- Vanilla extract (1 tsp)

Instructions

1. In a large bowl, combine farmer’s cheese, eggs, sugar, salt, flour (I usually use gluten-free one), and vanilla extract. Mix well.
2. Use your hands to form the cheese pancakes (syrniki). Coat them with some flour.
3. In a large skillet, heat avocado oil over medium-low heat. Add pancakes coated with flour. Cook for 3-4 minutes on each side, until golden brown.
4. Serve with sour cream, honey, and berries.
