Chocolate Avocado Cake

Ingredients

  • Almond flour (2 cups)
  • Baking powder (2 tsp)
  • Cocoa powder (1/2 cup and 2 tbsp)
  • Sugar (1/2 cup and 2 tbsp), or sweetener of your choice
  • Salt (1/4 tsp)
  • Eggs (2)
  • Avocado (2)
  • Greek yogurt (1/2 cup)
  • Milk of your choice (1/2 cup)
  • Heavy cream (1/2 cup)
  • Coconut oil (2 tbsp)

Instructions

  1. Preheat the oven to 350°F or 180°C.
  2. In a large bowl, combine almond flour, baking powder, cocoa powder (1/2 cup), sugar (1/2 cup), and salt. Mix well.
  3. In a blender, combine eggs, avocado (1), greek yogurt, and milk. Blend until smooth.
  4. Combine dry and wet ingredients. Pour the batter into a greased springform pan.
  5. Bake for 40 minutes. Then let it cool for at least an hour.
  6. For the frosting, in a blender, combine avocado (1), heavy cream, melted coconut oil, cocoa powder (2 tbsp), and sugar (2 tbsp). Blend until smooth. Adjust the texture by adding more heavy cream if needed.
  7. Spread the frosting on top of the cake.
  8. Decorate with fresh berries.
