Ingredients
- Almond flour (2 cups)
- Baking powder (2 tsp)
- Cocoa powder (1/2 cup and 2 tbsp)
- Sugar (1/2 cup and 2 tbsp), or sweetener of your choice
- Salt (1/4 tsp)
- Eggs (2)
- Avocado (2)
- Greek yogurt (1/2 cup)
- Milk of your choice (1/2 cup)
- Heavy cream (1/2 cup)
- Coconut oil (2 tbsp)
Instructions
- Preheat the oven to 350°F or 180°C.
- In a large bowl, combine almond flour, baking powder, cocoa powder (1/2 cup), sugar (1/2 cup), and salt. Mix well.
- In a blender, combine eggs, avocado (1), greek yogurt, and milk. Blend until smooth.
- Combine dry and wet ingredients. Pour the batter into a greased springform pan.
- Bake for 40 minutes. Then let it cool for at least an hour.
- For the frosting, in a blender, combine avocado (1), heavy cream, melted coconut oil, cocoa powder (2 tbsp), and sugar (2 tbsp). Blend until smooth. Adjust the texture by adding more heavy cream if needed.
- Spread the frosting on top of the cake.
- Decorate with fresh berries.
