Chilled Cucumber Kefir Soup

Ingredients

  • Cucumbers, chopped (4)
  • Kefir (1 cup)
  • Dill, chopped (4 tbsp)
  • Chives, chopped (3 tbsp)
  • Scallions, chopped (1/2 bunch)
  • Garlic, minced (1 clove)
  • Lemon, juiced (1/2)
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine cucumbers, kefir, dill, chives, scallions, garlic, lemon juice, salt, and pepper. Set aside for an hour.
  2. In a blender, puree the mixture. Refrigerate the soup for a few hours before serving.
  3. Optional: add some protein (shrimps, or crab meat).
  4. Drizzle with olive oil, then garnish with chopped dill and chives.
