Ingredients
- Cucumbers, chopped (4)
- Kefir (1 cup)
- Dill, chopped (4 tbsp)
- Chives, chopped (3 tbsp)
- Scallions, chopped (1/2 bunch)
- Garlic, minced (1 clove)
- Lemon, juiced (1/2)
- Salt and pepper to taste
Instructions
- In a large bowl, combine cucumbers, kefir, dill, chives, scallions, garlic, lemon juice, salt, and pepper. Set aside for an hour.
- In a blender, puree the mixture. Refrigerate the soup for a few hours before serving.
- Optional: add some protein (shrimps, or crab meat).
- Drizzle with olive oil, then garnish with chopped dill and chives.
