Chilled Cucumber Kefir Soup
Ingredients
Cucumbers, chopped (4)
Kefir (1 cup)
Dill, chopped (4 tbsp)
Chives, chopped (3 tbsp)
Scallions, chopped (1/2 bunch)
Garlic, minced (1 clove)
Lemon, juiced (1/2)
Salt and pepper to taste
Instructions
In a large bowl, combine cucumbers, kefir, dill, chives, scallions, garlic, lemon juice, salt, and pepper. Set aside for an hour.
In a blender, puree the mixture. Refrigerate the soup for a few hours before serving.
Optional: add some protein (shrimps, or crab meat).
Drizzle with olive oil, then garnish with chopped dill and chives.
