Spinach Quinoa Salad

Ingredients

  • Quinoa (1/2 cup)
  • Spinach (5 cups)
  • Red bell pepper (1/2)
  • Red onion, small (1/2)
  • Cherry tomatoes (1 cup)
  • Avocado (1)
  • Olive oil (1/4 cup)
  • Dijon mustard (1 1/2 tbsp)
  • Balsamic vinegar (1 tbsp)
  • Honey (1 tbsp)
  • Salt and pepper to taste

Instructions

  1. In a saucepan, bring the quinoa and 1 cup (may vary) of water to a boil, reduce the heat to low, cover and cook until the liquid is absorbed, around 20 minutes.
  2. In a large bowl, combine the spinach, chopped red bell pepper, red onion, tomatoes, avocado, and cooled quinoa.
  3. Make the dressing: combine olive oil, dijon mustard, balsamic, honey, salt, and pepper. Pour onto the salad.
